Introduction: The subject of food environments is becoming increasingly prominent in studies conducted in Brazil and around the world. This is particularly relevant in the local context. It is of great importance to understand its various aspects and potential impact on promoting healthy and appropriate nutrition for the population, based on national dietary guidelines. Objectives: The aim of this study is to examine the food environments in Natal/RN and their impact on promoting healthy and adequate eating habits in accordance with the recommendations of the Food Guide for the Brazilian Population (FGBP). Method: The thesis was prepared using various methods and organized into four sections. Section 1 consisted of a systematic review of food environment measurement methods, following the Preferred Reporting Items for Systematic Reviews and Meta-Analysis (PRISMA) guidelines. Section 2 is a methodological study that compares the applicability of the FGBP adherence scale to the Food Guide. The study population's level of adherence was taken into account by weighting the scale. The statistics used were the ROC curve and the Kappa test. Section 3 is a cross-sectional study that examines the relationship between food environments (deserts and food swamps) in Natal/RN and adherence to the FGBP. To analyze the association, multiple linear regression was performed using backward stepwise to investigate the relationship between the variables in question. Section 4 is a methodological study aimed at developing an instrument for assessing the food environment of popular restaurants, based on the theoretical model of the organisational food environment and the adaptation of the IQCOSAN tool (Quality Index of the Food and Nutritional Security Coordination), taking into account the recommendations of the FGBP and the legislation of the Popular Restaurants Programme. The expert panel will evaluate the tool using a content validity checklist, considering the content validity index. Results: 1)   The systematic review included 34 articles. All selected studies evaluated food environments according to the Glanz model, which includes community, consumer, organizational, and information aspects. The most commonly used methods for measuring environments were geographic information - buffer and GPS (n=16), secondary data, which includes telephone, commercial or government directories (n=8), and audit instruments, with a predominance of the Nutrition Environment Measurement Survey (NEMS) (n=10). 2) In the methodological study on the applicability of the adherence scale to the Food Guide, the new weighted indicator showed an accuracy of 98.7% (AUC = 0.987 and p<0.001; 95% CI 0.979-0.995) in correctly classifying individuals regarding their adherence to the FGBP. The scales showed almost perfect agreement (Kappa = 0.90; p<0.001). 3) The cross-sectional study analysed the relationship between food environments and adherence to the FGBP. The results showed that living in a food desert reduces the adherence score to the Guide by 2.41 (p=0.014), regardless of income, age and sex. Additionally, it reduces the adherence score by 1.39 (p=0.006) when considering practices that are contrary to the FGBP recommendations. The study found no significant effect of food swamps on the FGBP adherence score (p=0.886). The results of the study to develop an instrument for evaluating the food environments of popular restaurants are not yet available. They will be presented during the final defense of the thesis, after being reviewed by an advisory panel of experts. Conclusions: The systematic review indicates that the most common assessments among the studies were of the community and consumer food environment. The methods most frequently used to measure these environments were geographic information, secondary data, and audit instruments. The study on methodology demonstrated that the GAPB adherence scale, when applied to the population of the Brazuca Natal Study, is in agreement with the aspects proposed in its originais scale. This shows that the instrument has adequate discriminatory power in measuring the eating practices of the studied population. The cross-sectional article on food environments and the Food Guide indicated that food deserts influenced adherence to the FGBP in the study population.
