SUMMARY:

Since ancient times, seaweeds have been used by humans as an important part of their diet. Their
consumption in food by oriental peoples, especially Japan, China and Korea, is part of an ancient tradition. It is very common for them to be consumed in natura or processed by these peoples. For many years, the use of seaweeds as food was concentrated in these countries, in Europe and in the Americas, until recently seaweeds were not considered as part of their culinary activity, however, this situation has been changing rapidly, this is due to the fact that the macroalgae have attracted increasing interest as a source of human food and stimulated several researches in the nutritional area because they present in their composition, abundance of proteins, fibers, vitamins and minerals, in addition to low lipid content. In this context, the study aimed to evaluate the performance of the red macroalgae
Gracilaria domingensis under different sources of nutrients within a nutritional context, in addition, there was a need to popularize scientific knowledge about the main species of macroalgae used worldwide in human food. So, the research was divided into two chapters. In the first chapter, the macroalgae was cultivated under different weekly pulses
of nutrients in different proportions of nitrogen and phosphorus. Biomass and growth and chemical
composition (proteins, lipids, carbohydrates, total fibers and ash) were evaluated. It was possible to verify that for biomass, all treatments showed a significant increase, but the algae submitted to the lowest pulse concentration (T1) presented the highest values. For RGR, it was observed that T1 and T2 showed more constant growth patterns. Regarding the nutritional composition, it was found that the T1 samples registered a higher potential as a source of minerals, while T2 and T3 are more interesting as a source of carbohydrates and fibrous supplementation. In general, the three treatments presented good nutritional levels for all parameters analyzed, values that are in accordance with the literature for edible algae. However, the good performance presented by T1 in all analyses and because it is the most economical treatment, it is probably the most indicated for the cultivation of
G. domingensis. On chapter two, given the importance of popularizing academic knowledge, a material was produced, in the format of an ebook, from the compilation of scientific data currently known on the chemical composition of the main species of edible macroalgae worldwide. Something with a language more accessible to all audiences, so that this knowledge
does not become stagnant in academic spaces
