SUMMARY:

Throughout human evolution, behavioral adaptations have emerged in response to evolutionary challenges, from the periods of hunter-gatherers to the dietary transformations resulting from agriculture and industrialization. Urbanization and technological advances have not only shaped dietary behaviors but also reconfigured food systems, influencing choices, food availability, and production methods. The transition from rural to urban areas, a growing global phenomenon, brings changes in lifestyle, distancing people from nature and limiting the health benefits associated with natural exposure. This study proposes a comparative analysis of dietary habits among university students in urban and rural environments, considering factors such as food choices, exposure to nature, and socioeconomic elements. The research will involve students from Rio Grande do Norte, divided into four groups based on residence and study location, aiming to understand how access to nature influences dietary patterns. Data collection will be conducted online, using Google Forms, in a quasi-experimental cross-sectional study. Participants will undergo sociodemographic questionnaires, assessment of dietary habits through the ESQUADA questionnaire, evaluation of the relationship with nature through the NR questionnaire, and a questionnaire on the perception of natural areas. It is expected that the results will provide a deeper understanding of the factors shaping the dietary habits of university students in different contexts. Exposure to nature, recognized for positively impacting well-being, emerges as a key factor. The study aims not only to identify differences in dietary patterns but also to shed light on effective strategies for promoting healthy and sustainable eating. In a world where migration to urban areas is constant, understanding how urbanization affects dietary choices becomes crucial. By focusing on university students, a group in significant transition between environments, the results are expected to offer valuable insights to guide policies and effective interventions in promoting health and dietary well-being.
