SUMMARY:

The high consumption of ultra-processed foods (UPF) has resulted in unfavorable effects on health and the nutritional quality of the diet, but there are still few studies that evaluate the relationship between UPF consumption and Gestational Diabetes Mellitus (GDM). The aim of this study was to evaluate the impact of consumption of UPF on the glycemic profile of women with GDM followed at a high-risk prenatal clinic. The study is observational, longitudinal, prospective, of the cohort type, with women diagnosed with Gestational Diabetes Mellitus (GDM). Data collection took place in at least two moments during pregnancy, in which information was obtained on socioeconomic and health characteristics and assessment of food consumption through the application of 24-hour recalls. The assessment of food consumption was performed using the NOVA classification, according to the degree of food processing. The glycemic profile was evaluated by self-monitoring of capillary blood glucose, carried out in fasting, one hour after breakfast, one hour after lunch and one hour after dinner, and considered adequate when the preprandial blood glucose values were between 65-95 mg/dL and 1h postprandial <140 mg/dL. So far, socioeconomic data and the glycemic profile of 57 participants and food consumption data of 46 have been analyzed. The average caloric intake of women was 1,831 Kcal (776 – 4743 Kcal), with a greater caloric contribution from in natura foods or minimally processed and 15% ultra-processed foods. More than half of the calories from UPF came from the consumption of bread and cookies (63.4%), followed by the processed meat group (10.2%) and fat (8.6%). As for the glycemic profile, 18.9% of pregnant women had blood glucose levels above the target. With the completion of the analyzes, it will be possible to assess whether there is an association between the higher consumption of UPF and the glycemic profile of women with GDM.
