SUMMARY:

Food plays a key role in ethnic tourism in Serra da Barriga (AL): the Baobá restaurant, headed by Ialorixá Mãe Neide Oyá D’Oxum, has become a means of promoting Serra da Barriga. It was created in mid-2012 when the visitation practices to the Quilombo dos Palmares Memorial Park intensified and corresponded with the emergence of ethnic tourism in Alagoas. An approach to the construction of the ethnic discourse around the figure of Zumbi dos Palmares will be presented and how this discourse is responsible for the advertising of the place, in addition to taking the Baobá restaurant to the countryside and the figure of the ialorixá Neide Oyá D'Oxum as influencers of commercialization. of a quilombola diet. The trajectory of the ialorixá Neide Oyá D’Oxum and her arrival in Palmares informs about the process of patrimonialization of culinary practices, the relationship with local tourism and religions of African origin. Strangely, tourism does not involve the quilombola community of Muquém, its food production and local handicrafts and the food spread at the Baobá restaurant without mentioning the knowledge of women. Thus, I will verify the impact of ethnic tourism in silencing the memory of quilombola women in the Palmares region and their eating habits. The project was designed based on the propagation of Afro-religious food in the gastronomic environments of Alagoas, from higher education institutions to tourist events, as a characteristic of the traditional food of the state and participation of Ialorixá in spaces of power evidencing the Umbanda identity and food of Holy.
