SUMMARY:

The growing search for applications for by-products in the most diverse branches of industry has enabled the insertion of biodegradable and renewable products with great potential in the market. The aim of this research is to analyze different drying methods for the green ulva macroalgae, which comes from shrimp and oyster ponds. Green seaweed is rich in nutrients and bioactive compounds and can be used for numerous purposes. However, its high moisture content reduces its shelf life, and drying is an alternative way of preserving and conserving this raw material. It is necessary to analyze the best drying method, always seeking to preserve the phenolic compounds present in the sample. Therefore three drying methods will be tested: spouted bed, tray dryer and spray dryer, with different temperatures and pre-treatments, thus evaluating the preservation of the compounds under the experimental conditions determined. One of the pre-treatments will be ultrasound which has been shown in the literature to be effective in maintaining bioactives and reducing drying time. With the powders duly obtained, the physicochemical characteristics and microbiological preservation will be analyzed, enabling an analysis of their application. In addition, a life cycle assessment will be carried out for each of the processes to estimating the main environmental impacts at each stage in order to find a more sustainable production route.
