SUMMARY:

In this work, the objective is to develop an experimental study of drying for the gel aloe vera and aloin, using as process the spouted bed dryer. The proposal is to evaluate different operating conditions and to seek results able to lead to a product with preserved characteristics in terms of antioxidant activity and chemical composition. The importance of this study is due to the fact that Aloe vera gel and aloin have several biological activities, such as: hypoglycemic, antimicrobial, anti-inflammatory, healing, antiviral and antineoplastic activities. Therefore, drying constitutes an important alternative to solve the problem of low durability of these compounds in natura.Given that the use of the spouted bed drying process for these substances has not been reported yet, the evaluation of the effect of the operational parameters of this process in relation to the maintenance of the studied constituents is scientific and technological relevant. From results will be possible to verify the process viability for powder production with properties able to apply in drug, cosmetic and food.
