Particle-stabilized emulsions are called Pickering emulsions after the precursor to this method of stabilization. Particles added to the emulsion system accumulate at the liquid-liquid interface, covering the dispersed phase droplets and a physical barrier is generated, preventing phase separation. This emulsification strategy has been very promising in areas such as the encapsulation of bioactives, production of new foods, preparation of polymers, catalysis, among others. Initially, this stabilization mechanism was used in conventional emulsions formed from oil/water (O/W). However, recent studies indicate the possibility of particles also depositing at the liquid-liquid interface of aqueous two-phase systems leading to the formation of stable Pickering water/water (W/W) emulsions. In this work, the possibility of stabilization of Pickering emulsions (W/W) using protein, cellulose and lignin nanoparticles will be investigated. Initially, different methods of preparation will be tested and the properties of the nanoparticles will be analyzed. Then, they will be used in the stabilization of Pickering emulsions (W/A) and stable emulsions will also be characterized. Finally, these stable emulsions will be applied in the formulation of new foods and drugs.
