Among the various species of grains, green beans (Vigna unguiculatra (L) Walp), is a seasonal product widely consumed in northeastern Brazil. Beans are harvested while they are still green, with high humidity (about 60%, on average) and their conservation is through refrigeration and freezing, which implies higher costs due to the high consumption of energy required for storage and transport. These factors directly affect the expansion of the market to other regions of Brazil, since green beans are a typical product in the Northeast. The characteristics of green beans and other grains sold with high moisture content highlight the relevance of the study of methods that ensure the storage and logistical use of these grains for a longer period, and even outside their seasonal period. However, it is important to note that the dehydrated grain must recover its organoleptic characteristics when rehydrated for preparation and consumption. Important studies have already been carried out on the drying of green beans at UFRN, using different forms of drying. Medeiros (2004) obtained excellent results in drying green beans using combined methods of convective drying in tray and spouted bed dryers. Dehydrated green beans showed good rehydration capacity and sensory tests indicated good product quality. The large amount of experimental data generated by Medeiros (2004) in the drying of green beans motivated the theme to be studied in this dissertation whose general objective is to develop a model to describe the combined fixed bed/grain spouted bed drying with similar characteristics green beans considering particle shrinkage and mass and energy balances. The model must be able to predict the effect of operating conditions on the combined drying process and can be validated with the experimental results obtained by Medeiros (2004) .
