Food and Nutrition Education in Elementary School: a Freirean problem-solving approach

In order to deal with the consequences of hunger and poor eating habits, especially in Brazil, which transits between malnutrition and obesity, many studies have addressed the Food-Nutrition theme. Of particular interest to educators are those dealing with the physiological aspect, in which malnutrition is investigated as a limiting factor to learning, as well as those that focus on Food and Nutrition Education. In this qualitative study, we sought to evaluate the potential of a Didactic Sequence based on the perspective of Freirean problematization, developed in the dynamics of Pedagogical Moments and approaching Food and Nutrition Education, based on the Freirean thematic approach, to promote the adoption of more critical attitudes and reflective of the students' eating habits. A survey questionnaire was applied, followed by the Didactic Sequence in an 8th grade elementary school class in a public school in Natal-RN. In addition to the questionnaire, an adapted portfolio, room activities and direct observation were used as instruments of data collection. The results were analyzed using elements of content analysis (BARDIN, 1977). The analysis of the survey questionnaires showed that the students present a range of misconceptions regarding feeding-nutrition; do not identify the nutrients present in each food; eat too much high-calorie foods, cholesterol and sodium; and still practically do not consume whole grains and olive oil. The results of the intervention showed that students resist participating in non-traditional methodologies. Thus, we consider some positive points reached: the encouragement to the proposition of hypotheses and the possibility of reflection regarding the alimentary habits. In addition, after the intervention, a greater number of students referred to the way of preparation, the choice of ingredients, the hygiene. Reflecting an understanding that eating is more than eating food. Understanding that many factors will drive food choices. Most students assessed the sequence of activities as good or very good. The misconceptions diagnosed in the pre-test were not totally abandoned, given their persistence and difficult overcoming. Another limitation observed was the difficulty related to mathematical operations. Even so, the school proved to be a propitious space to implement actions in Food and Nutrition Education, aiming at the emancipation of the student. The perspective of problematizing Freiriana allowed the students to be in the center of the debate, opportunizing to reflect on the reality and to question it.
