RESUMO:

Currently, the search for the integral use of lignocellulosic materials is necessary in the attention to the environment, as well as in the reduction of costs and in the valorization of this raw material. Among these materials are agro-industrial wastes widely used for the production of various products as enzymes. This study investigates the mangaba pulp residue (Hancornia speciosa Gomes) that is characterized and used as a substrate for the production of enzymes by solid state fermentation (FSS) using the filamentous fungus Aspergillus niger, in addition to the extraction of other products. The physical-chemical and bioactive attributes of mango residue and its extracts were evaluated. Concentrations of total phenolic compounds of 564.1 ± 0.047 mg of gallic acid / g of oil and Total Antioxidant Activity - TCA of 95.46 ± 1.58 mg of ascorbic acid / g of ethanolic extract were found. In addition to the enzymatic production of lipase (50.11 ± 0.02 U / g), pectinase (0.45 ± 0.01 U / g) and polygalacturonase of the extracted residue (76.32 ± 0.11 U / g) the production of biofilms using chitosan with the application of ethanolic extract and alkaline lignin were developed in this study. Polygalacturonase was subjected to stability tests under different temperature and pH conditions. The application of 1.0% of extract in the process of clarification of the juice allowed a reduction of 34% in turbidity, 11% of viscosity. Biofilms of chitosan with 1.0% and 0.5% (m / m) of lignin were submitted to physical activity and antioxidant analysis, based on DPPH free radical capture activity. The addition of extract or lignin in the proportions used to make the films did not contribute to a better thermal stability. In general, comparing with other similar residues and other works, the results presented by the mangaba residue are relevant because it is a cheap raw material with potential added value to be exploited for the production of enzymes and other products of biotechnological interest.
